  • 1 to 1 1/4 cups shredded sharp white cheddar Freshly grated if possible.
  • 1 ripe peach thinly sliced Canned or frozen, thawed peaches work in a pinch.
  • 1 to 2 teaspoons honey Or hot honey for a little kick.
  • 1 tablespoon butter Softened, for spreading on the bread or pan.
  • 1 pinch salt To taste.
  • 1 pinch black pepper To taste.
  • Optional: fresh thyme leaves, a tiny squeeze of lemon, or a drizzle of balsamic glaze For additional flavor.

Preparation
  1. Start by preparing the ingredients: slice the bread and grate the sharp white cheddar.
  2. Thinly slice the ripe peach. If using canned or frozen peaches, thaw and pat them dry.
  3. Spread softened butter on the outside of each slice of bread.
Cooking
  1. In a skillet over medium-low heat, place one slice of bread, buttered side down.
  2. Layer with a even amount of shredded white cheddar, then add the peach slices.
  3. Drizzle honey over the peaches and add any optional ingredients like thyme.
  4. Top with another slice of bread, buttered side up.
  5. Cook for 2-3 minutes until the bottom is golden brown, then carefully flip the sandwich.
  6. Cover with a lid for the first minute or two to trap heat and melt the cheese.
  7. Cook until the second side is golden brown and the cheese is melted, about another 2-3 minutes.
  8. Remove from the skillet and let the sandwich rest for a minute before cutting.

Notes

For optimal results, avoid overloading the sandwich with cheese or peaches to prevent sogginess. A gentle heat is key to fully melting the cheese without burning the bread.
