  • 1 pound boneless chicken thighs Can substitute with chicken breasts
  • 1/4 cup honey Use fresh honey to avoid stickiness
  • 2 tablespoons fresh lime juice Avoid bottled lime juice for best flavor
  • 1 teaspoon salt Adjust seasoning to taste
For the Rice
  • 1 cup rice (any type) Fluff rice and toss with cilantro and a squeeze of lime
  • 1/4 cup chopped cilantro Can substitute with parsley if needed
For Assembly
  • 1 large avocado Squeeze lime to prevent browning
  • 1/2 cup cherry tomatoes, sliced For garnish and flavor
  • 1 cup tortilla chips Optional for serving

Method
 

Marinate the Chicken
  1. In a bowl, mix honey, lime juice, and salt.
  2. Add chicken thighs to the marinade and let soak for at least 30 minutes.
Prepare the Rice
  1. Cook rice according to package instructions.
  2. Fluff the rice and stir in chopped cilantro and a squeeze of lime.
Cook the Chicken
  1. Grill or bake the marinated chicken until cooked through, about 20 minutes.
  2. Let the chicken rest for a few minutes before slicing.
Assemble the Dish
  1. In a bowl, layer rice, avocado, and sliced chicken.
  2. Top with sliced cherry tomatoes and serve with tortilla chips.
