  • 4 pieces Pork chops (preferably boneless loin chops) 1 inch thick for best results.
  • 2 cups Sweet potatoes, peeled and cut into small cubes Cut small to cook fast.
For the Sauce
  • 1/4 cup Honey Adjust based on sweetness preference.
  • 1 tablespoon Garlic, minced Fresh is best.
  • 2 tablespoons Soy sauce or tamari Use tamari for gluten-free.
  • 1 tablespoon Olive oil or melted butter
  • 1 teaspoon Salt For seasoning.
  • 1 teaspoon Pepper For seasoning.
Optional Extras
  • 1/2 teaspoon Smoked paprika Add for smoky flavor.
  • 1/4 teaspoon Chili flakes Add for heat.
  • 1 slice Lemon Squeeze for brightness.

Method
 

Preparation
  1. Heat the oven to 400°F (200°C) and prepare a sheet pan.
  2. Lay out large pieces of foil to create packets.
  3. Place sweet potato cubes in the center of each foil piece, drizzle with olive oil, and season with salt and pepper.
  4. Place a pork chop on top of the sweet potatoes.
  5. In a small bowl, mix together honey, soy sauce, minced garlic, and olive oil or butter.
  6. Spoon the sauce over the pork and sweet potatoes, saving some for brushing later.
Cooking
  1. Seal the foil packets tightly to keep steam inside.
  2. Bake in the preheated oven for 20 to 30 minutes depending on chop thickness and cubed sweet potato size.
  3. Carefully open the packets to release steam.
  4. Optional: Broil for an additional 2 to 4 minutes for extra color on top.

Notes

Let pork rest for a few minutes before serving. This dish can be prepared in advance and stored in the fridge for up to 8 hours before baking. Adjust cooking times based on ingredient sizes to achieve desired tenderness.
