Preparation
- Heat the oven to 400°F (200°C) and prepare a sheet pan.
- Lay out large pieces of foil to create packets.
- Place sweet potato cubes in the center of each foil piece, drizzle with olive oil, and season with salt and pepper.
- Place a pork chop on top of the sweet potatoes.
- In a small bowl, mix together honey, soy sauce, minced garlic, and olive oil or butter.
- Spoon the sauce over the pork and sweet potatoes, saving some for brushing later.
Cooking
- Seal the foil packets tightly to keep steam inside.
- Bake in the preheated oven for 20 to 30 minutes depending on chop thickness and cubed sweet potato size.
- Carefully open the packets to release steam.
- Optional: Broil for an additional 2 to 4 minutes for extra color on top.
Notes
Let pork rest for a few minutes before serving. This dish can be prepared in advance and stored in the fridge for up to 8 hours before baking. Adjust cooking times based on ingredient sizes to achieve desired tenderness.
