  • 1 lb ground beef (80% or 85% lean) A little fat adds flavor.
  • 4 cloves garlic, minced Fresh is best here.
  • 1/3 cup honey Adds sweetness and makes the sauce glossy.
  • 1/4 cup soy sauce Brings saltiness and depth.
  • 1 tbsp rice vinegar or apple cider vinegar Prevents the sauce from tasting flat.
  • 1 tbsp cornstarch Optional, helps sauce cling to beef.
  • 4 cups cooked rice You can swap with brown rice or cauliflower rice.
Toppings
  • 1 cup sliced cucumbers Fresh for added crunch.
  • 1 cup shredded carrots Adds color and texture.
  • 1/4 cup sliced green onions For garnish.
  • 2 tbsp sesame seeds Adds crunch.

Method
 

Cooking the Beef
  1. In a large skillet over medium heat, brown the ground beef until fully cooked.
  2. Drain excess fat, leaving a little for flavor.
Making the Sauce
  1. Add minced garlic to the browned beef and sauté for an additional minute.
  2. In a bowl, whisk together honey, soy sauce, rice vinegar and cornstarch.
  3. Pour the sauce over the beef and stir until everything is well coated and sauce thickens.
Assembly
  1. Serve the beef mixture over cooked rice.
  2. Top with cucumbers, shredded carrots, green onions, and sesame seeds.

Notes

For meal prep, store beef and rice in separate containers. Add crunchy toppings just before serving.
