Homemade Sweet Chili Sauce

Ingredients
  

For the sauce
  • 1/2 cup rice vinegar (or white vinegar in a pinch) Use rice vinegar for a milder taste.
  • 1/2 cup sugar (start here, adjust later) Adjust the amount of sugar to taste.
  • 1/2 cup water Water is used to dissolve the sugar.
  • 3 to 5 cloves garlic, minced Add more or less garlic based on preference.
  • 1 to 2 tablespoons chili flakes Adjust to your desired heat level.
  • 1 tablespoon ketchup Optional; adds color and a hint of tomato flavor.
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water Used for thickening the sauce.
  • 1 pinch salt Enhances the flavors.

Method
 

Preparation
  1. In a small pot, add vinegar, sugar, and water. Stir over medium heat until the sugar dissolves.
  2. Add garlic, chili flakes, ketchup (if using), and a pinch of salt.
  3. Let it gently simmer for 5 to 7 minutes so the garlic softens and the flavor comes together.
  4. Stir in the cornstarch slurry. Keep stirring for 30 to 60 seconds as it thickens.
  5. Turn off the heat and let it cool. It thickens more as it cools.

Notes

Storage: Once cooled, store the sauce in a clean jar with a lid. It keeps well in the fridge for about 2 weeks. If it thickens too much in the fridge, stir in a teaspoon of warm water to loosen it up.
