Homemade Granola with Honey and Almonds

Ingredients
  

Granola Base
  • 3 cups rolled oats Old fashioned rolled oats
  • 1 cup almonds Sliced or chopped; whole almonds are also fine
  • 0.25 cups neutral oil Avocado, grapeseed, or light olive oil
  • 1/2 teaspoon salt Enhances the honey flavor
  • 1 teaspoon cinnamon Optional, for added flavor
Sweetener
  • 1/3 cup honey Star ingredient for sweetness and clustering
Optional Additions
  • 1 teaspoon vanilla Add after baking for fresh aroma
  • 1 cup mix-ins Dried fruit, coconut flakes, chia seeds, or chocolate chips, added after baking

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C). Line a baking sheet with parchment paper if you have it.
  2. In a large bowl, combine the rolled oats, almonds, cinnamon (if using), and salt.
  3. In a small bowl or measuring cup, mix the honey with the oil. If the honey is thick, warm it slightly to make it easier to pour.
  4. Pour the honey mixture over the oat mixture, stirring until everything is well coated.
Baking
  1. Spread the mixture onto the prepared baking sheet in an even layer.
  2. Bake for about 20 to 25 minutes, stirring once halfway through, until light golden brown.
  3. Remove from the oven and let it cool completely on the baking sheet before breaking up.
Finishing Touches
  1. Once cooled, stir in vanilla and any additional mix-ins like dried cranberries or chocolate chips.

Notes

Keep in an airtight container for 1-2 weeks. For crunchier texture, make sure to cool completely before breaking.
