- In a medium bowl, whisk egg yolks and sugar until it looks lighter in color and a bit creamy, about 1-2 minutes.
- In a saucepan over medium-low heat, warm the milk and heavy cream until steaming but not boiling, stirring occasionally.
- While whisking the yolks, pour in small splashes of the hot milk mixture to temper the eggs, until they feel warm.
- Pour the egg mixture back into the saucepan. Keep the heat low and stir constantly for about 5-8 minutes until thickened slightly.
- Remove from heat and stir in vanilla, a pinch of salt, and nutmeg. Add alcohol if desired after cooling for a few minutes.
- Strain the mixture through a fine mesh strainer into a bowl or pitcher. Cool slightly, then cover and refrigerate for at least 4 hours (overnight is better).
- Shake or stir before serving, pour into glasses, and sprinkle nutmeg on top. Add whipped cream if desired.
Notes
Taste the eggnog after it chills to adjust sweetness and spice levels. For variations, consider using more milk for a lighter drink or adding coffee for a different flavor.
