Ingredients
  

For the Eggnog Base
  • 6 large egg yolks For richness and texture.
  • 3/4 cup sugar Adjust based on sweetness preference.
  • 2 cups whole milk Base for the drink.
  • 1 cup heavy cream For a creamy texture.
  • 1 tablespoon vanilla extract For flavor.
  • 1/2 teaspoon nutmeg Essential for eggnog aroma.
  • 1 pinch salt Balances sweetness.
Optional Add-ins
  • 1 teaspoon cinnamon For additional spice.
  • 1 pinch clove Use sparingly.
  • 1 cup alcohol (bourbon, rum, brandy) Add after chilling for a spiked version.

Method
 

Preparation
  1. In a bowl, whisk the egg yolks and sugar until the mixture is lighter and thickened.
  2. In a saucepan, warm the milk and cream over medium-low heat until hot, but not boiling.
  3. Slowly pour a little of the hot milk mixture into the yolks while whisking continuously to avoid scrambling the eggs.
  4. Return the mixture back to the saucepan and cook on low heat, stirring constantly, until it thickens slightly.
  5. Remove from heat and stir in vanilla, nutmeg, and pinch of salt. Adjust sweetness and spice to taste.
  6. Cool the eggnog by pouring it into a pitcher or jar and refrigerating for at least 4 hours, preferably overnight.
  7. For extra smooth texture, strain through a fine mesh sieve before serving.

Notes

Store in a clean container in the fridge for 2-3 days for optimal freshness. Shake or stir before serving as spices may settle. Do not freeze eggnog.
