For the broth
  • 4 cups chicken broth Use vegetable broth as a substitute if needed.
  • 2 cloves garlic, minced Adds bold flavor to the broth.
  • 1 inch ginger, sliced For a warm and aromatic flavor.
  • 1 tablespoon soy sauce Tamari or coconut aminos can be used for gluten-free.
  • 1 teaspoon sesame oil Adds a nutty aroma to the broth.
Main ingredients
  • 4 oz ramen noodles Can substitute with soba, udon, or rice noodles.
  • 2 cups shredded cooked chicken Rotisserie chicken works great.
Toppings
  • 4 pieces soft boiled eggs Cook for 7 minutes for a jammy center.
  • 1 cup fresh spinach Add right before serving.
  • 1 cup sliced mushrooms Quick cooking vegetables.
  • 1 cup corn Can use frozen corn.
  • 2 tablespoons chili oil Adjust to add spiciness.
  • 2 tablespoons sliced green onions For garnish.

Method
 

Preparation
  1. Start the broth by heating a little oil in a pot over medium heat, then add minced garlic and sliced ginger for about 30 seconds.
  2. Pour in chicken broth, soy sauce, and sesame oil. Let it simmer while you prepare the other ingredients.
Cooking
  1. Cook ramen noodles separately according to package instructions to keep them from becoming mushy.
  2. In the last two minutes of simmering, toss in the shredded chicken to warm it through.
  3. Prepare toppings by soft boiling the eggs for 7 minutes, then placing them in cold water before peeling.
Assembly
  1. In each serving bowl, place a portion of noodles, ladle hot broth over them, and add in shredded chicken.
  2. Top with soft boiled eggs, fresh spinach, sliced mushrooms, corn, chili oil, and green onions.

Notes

Store broth and chicken together, noodles separate, and toppings separate for easy meal prep. Reheat broth and chicken before serving and add noodles as needed.
