Ingredients
  

Main Ingredients
  • 1 cup Sharp cheddar cheese, freshly shredded Best for flavor.
  • 1 cup All purpose flour
  • 4 tablespoons Butter, cold, cut into small pieces Keep the butter cold for best results.
  • 1/2 teaspoon Salt Plus extra for sprinkling if desired.
  • 2-4 tablespoons Cold water Just enough to bring the dough together.
Optional Flavorings
  • 1 pinch Paprika For color and flavor.
  • 1 pinch Garlic powder Adds a nice flavor.
  • 1 pinch Cayenne For a spicy kick.
  • 1 pinch Black pepper Optional for seasoning.

Method
 

Preparation
  1. Add flour, salt, and cold butter to a bowl and rub it together with your fingertips until it looks like coarse crumbs.
  2. Mix in the shredded cheddar.
  3. Add cold water a little at a time, just until the dough comes together.
  4. Wrap the dough and chill it for about 20 to 30 minutes.
Baking
  1. Heat your oven to 350°F.
  2. Roll the dough between two pieces of parchment paper until it is very thin.
  3. Cut into small squares with a knife or pizza cutter.
  4. Poke each square with a skewer or chopstick if you want the little hole in the middle.
  5. Move the squares to a baking sheet and sprinkle with a little salt if desired.
  6. Bake for about 12 to 16 minutes, until lightly browned around the edges.
  7. Let them cool for a few minutes on the baking sheet before transferring to a rack.

Notes

Store in an airtight container for about 4 to 5 days. Re-crisp in the oven if they soften.
