Preparation
- Heat a skillet on medium heat, add a tiny splash of oil, then brown the ground beef.
- Once the beef is cooked through, drain any extra grease if desired.
- Stir in taco seasoning plus a splash of water and let it simmer for a couple of minutes.
- If your rice is already cooked, microwave it with a damp paper towel on top.
- Warm the beans and corn if needed.
- For the sauce, add cottage cheese, lime juice, garlic, seasoning, and a pinch of salt to a blender.
- Blend until smooth and add water slowly until desired consistency is reached.
Assembly
- In each bowl, start with rice, then add meat, beans, and corn.
- Top with lettuce, tomatoes, onions, and your favorite toppings.
- Drizzle the cottage cheese sauce over the top and add extra lime and hot sauce if desired.
Notes
Use a blender for the sauce for extra smoothness. Thin the sauce slowly and season both the meat and sauce for full flavor. Store components separately for meal prep.
