Protein Sources
  • 1 to 1.5 pounds Chicken Thighs or breast
  • 1 cup Edamame Shelled
  • 1 cup Tofu Baked cubes
  • 1 pound Lean ground beef For beef bowls
Carbohydrates
  • 2 cups Quinoa or rice Cooked
  • 2 medium Sweet potatoes Roasted or cubed
Vegetables
  • 2 cups Mixed roasted vegetables Zucchini, red onion, peppers, etc.
  • 1 cup Cucumber Sliced
  • 1 cup Tomatoes
Fats
  • 1 medium Avocado Sliced
  • 3 tablespoons Olive oil For cooking and dressing
Sauces
  • 1 cup Greek yogurt Mixed with lemon juice and salt
  • 1 cup Peanut butter sauce Mixed with soy sauce and lime
  • 1 cup Salsa For topping

Method
 

Preparation
  1. Prepare the grains first by cooking quinoa or rice according to package instructions.
  2. Roast the mixed vegetables like zucchini and red onion in the oven.
  3. Cook the chicken or beef in a skillet, seasoning as desired.
  4. For sauces, mix Greek yogurt with lemon juice and salt, and prepare the peanut butter sauce by combining peanut butter, soy sauce, lime juice, and a splash of water.
Assembly
  1. In meal prep containers, build each bowl starting with a base of quinoa or rice.
  2. Add your protein (chicken, beef, tofu, or beans), followed by roasted veggies and fresh toppings.
  3. Drizzle with your chosen sauce and top with avocado.

Notes

For added freshness, store sauces separately and add crunchy veggies right before eating. You can also change your sauce daily for a different flavor.
