Main Ingredients
  • 4 pieces Boneless skinless chicken breasts Can substitute with chicken thighs for more juiciness.
  • 1 cup Cottage cheese Blended for creaminess and protein; can substitute with plain Greek yogurt.
  • 1 cup Chicken broth Vegetable broth can be used as an alternative.
  • 1/2 cup Sun dried tomatoes Use kind in a jar; can use oil from jar to cook chicken.
  • 3 cloves Garlic Fresh minced garlic is preferred.
  • 1/2 cup Parmesan cheese Use freshly grated for better melting.
  • 2 cups Fresh baby spinach Can substitute with frozen spinach, squeeze out water.
Seasonings
  • 1 teaspoon Salt Adjust according to taste.
  • 1 teaspoon Black pepper Adjust according to taste.
  • 1 teaspoon Italian seasoning
  • 1 pinch Red pepper flakes Optional, for added heat.

Method
 

Preparation
  1. Pat the chicken dry and season both sides with salt, pepper, and Italian seasoning.
Cooking
  1. Heat a little olive oil in a large skillet over medium-high heat. Cook chicken 4 to 6 minutes per side until golden, then move it to a plate.
  2. In the same skillet, add minced garlic and stir for about 30 seconds. Add chopped sun dried tomatoes and stir again.
  3. Blend cottage cheese with chicken broth until smooth, then pour into the skillet and stir. Add parmesan and let it gently bubble.
  4. Add the chicken back in, along with any juices on the plate. Simmer for 5 to 8 minutes until cooked through and sauce thickens.
  5. Stir in spinach until wilted. Taste and adjust salt, pepper, or red pepper flakes.

Notes

Let cool before storing in an airtight container for up to 3-4 days in the fridge. Can be frozen but may alter texture after thawing.
