Preparation
- Preheat your oven to 300°F.
- Grease a silicone muffin tray or use a metal muffin tin with liners.
- Blend egg whites with cottage cheese and seasonings until smooth and a little foamy.
- Stir in chopped roasted red peppers, spinach, and shredded cheese.
- Pour the mixture into the muffin cups, filling about three quarters full.
- Place the tray in a larger pan and add hot water to the outer pan to create a water bath.
Baking
- Bake for about 25 to 30 minutes until set in the middle.
- Cool for 10 minutes, then pop them out.
Notes
For the best texture, ensure to blend the mixture well, dry your add-ins, and do not overbake. These bites can be stored in an airtight container in the fridge for about 4 days or in the freezer for up to 2 months.
