Ingredients
  

Main ingredients
  • 1 carton Egg whites Carton egg whites make this super easy
  • 1 cup Cottage cheese Helps with creamy texture and adds protein
  • 1 cup Shredded cheese Monterey Jack, mozzarella, or light cheddar
  • 1 cup Spinach Fresh or thawed frozen
  • 1/2 cup Roasted red peppers Jarred is fine, just pat dry
  • 1/2 teaspoon Salt To taste
  • 1/4 teaspoon Black pepper To taste
  • 1/4 teaspoon Garlic powder To taste
Substitutions
  • 1 cup Ricotta or plain Greek yogurt Can replace cottage cheese
  • 1 cup Kale, broccoli, or zucchini Can replace spinach
  • 1/2 cup Sautéed mushrooms or cooked turkey bacon Can replace roasted red peppers

Method
 

Preparation
  1. Preheat your oven to 300°F.
  2. Grease a silicone muffin tray or use a metal muffin tin with liners.
  3. Blend egg whites with cottage cheese and seasonings until smooth and a little foamy.
  4. Stir in chopped roasted red peppers, spinach, and shredded cheese.
  5. Pour the mixture into the muffin cups, filling about three quarters full.
  6. Place the tray in a larger pan and add hot water to the outer pan to create a water bath.
Baking
  1. Bake for about 25 to 30 minutes until set in the middle.
  2. Cool for 10 minutes, then pop them out.

Notes

For the best texture, ensure to blend the mixture well, dry your add-ins, and do not overbake. These bites can be stored in an airtight container in the fridge for about 4 days or in the freezer for up to 2 months.
