  • 1 lb chicken breast, diced Can substitute with chicken thighs for juiciness.
  • 2 cups pasta Chickpea or lentil pasta recommended for higher protein.
  • 2 cups fresh spinach Frozen chopped spinach can be used after thawing and squeezing out water.
  • 1 cup light cream For a creamy sauce base.
  • 1/2 cup Greek yogurt Add at the end to prevent separation.
  • 1/4 cup parmesan cheese, grated For added flavor and protein.

Method
 

Preparation and Cooking
  1. Cook pasta according to package instructions and drain, saving a splash of pasta water.
  2. In the same pan, cook the diced chicken over medium heat until browned and cooked through.
  3. Add spinach to the pan and cook until wilted.
  4. Lower the heat and stir in the light cream and Greek yogurt until combined.
  5. If the sauce is too thick, add reserved pasta water gradually until desired consistency is reached.
  6. Mix in the cooked pasta and parmesan cheese, stirring until everything is well coated.
  7. Serve immediately, garnished with extra parmesan and cracked black pepper.

Notes

Can be made ahead of time; store in the fridge and reheat with a splash of water or milk to loosen the sauce.
