Hawaiian Baked Huli Huli Chicken

Ingredients
  

For the Marinade
  • 1 cup Pineapple juice Use 100 percent juice for clean flavor.
  • 1/2 cup Soy sauce For sweet-salty balance.
  • 1/4 cup Brown sugar Adds sweetness and color.
  • 1/4 cup Ketchup Part of the classic trio.
  • 1 tablespoon Fresh ginger, grated Big flavor maker.
  • 2 cloves Garlic, minced For added flavor.
  • 2 tablespoons Rice vinegar or apple cider vinegar Adds brightness.
  • 1 teaspoon Chili flakes or sriracha Optional for heat.
For the Chicken
  • 2 pounds Chicken thighs, bone-in Stays juicy, but breasts work fine with careful timing.

Method
 

Preparation
  1. In a bowl, mix together all the marinade ingredients.
  2. Add the chicken to the marinade, cover, and refrigerate for 4 to 12 hours.
  3. Preheat the oven to 400°F (200°C).
Baking
  1. Pat the chicken dry and brush with oil.
  2. Place the chicken on a rack set inside a sheet pan.
  3. Reserve some marinade for basting and serving.
  4. Bake for 30-40 minutes, flipping halfway and basting once or twice.
  5. When almost done, switch to broil for 2-3 minutes to caramelize.
  6. Let the chicken rest for 5-7 minutes before slicing.

Notes

Great for meal prep; leftovers are fantastic in salads, wraps, or rice bowls. Store extra sauce for dipping.
