Preparation
- In a bowl, mix together all the marinade ingredients.
- Add the chicken to the marinade, cover, and refrigerate for 4 to 12 hours.
- Preheat the oven to 400°F (200°C).
Baking
- Pat the chicken dry and brush with oil.
- Place the chicken on a rack set inside a sheet pan.
- Reserve some marinade for basting and serving.
- Bake for 30-40 minutes, flipping halfway and basting once or twice.
- When almost done, switch to broil for 2-3 minutes to caramelize.
- Let the chicken rest for 5-7 minutes before slicing.
Notes
Great for meal prep; leftovers are fantastic in salads, wraps, or rice bowls. Store extra sauce for dipping.
