Ingredients
  

Salad Ingredients
  • 4 cups baby spinach or arugula or spring mix
  • 1 large sweet potato Cubed and roasted
  • 1 medium apple or pear Sliced
  • 1/2 cup dried cranberries Or chopped dates
  • 1/2 cup toasted pecans or walnuts or pumpkin seeds Toasted is preferred
  • 1/3 cup crumbled goat cheese or feta Optional
  • 2 cups protein option (rotisserie chicken, roasted chickpeas, turkey leftovers) Optional
Maple Dijon Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1-2 teaspoons Dijon mustard
  • 1-2 teaspoons maple syrup or honey
  • to taste salt and black pepper
  • a pinch cinnamon Optional for extra warmth

Method
 

Roasting Sweet Potatoes
  1. Preheat the oven to 425°F (220°C). Cube the sweet potato, toss it with olive oil, salt, and pepper, and spread it on a baking sheet. Roast for 20-25 minutes, flipping halfway through, until browned and soft.
Preparing Salad Bowl
  1. While the sweet potatoes roast, add the greens to a large bowl. Slice the apple or pear, grab the dried cranberries, and crumble the goat cheese. Toast the nuts if desired.
Making the Dressing
  1. In a small jar with a lid, combine the olive oil, apple cider vinegar, Dijon mustard, maple syrup, salt, and pepper. Shake well and adjust flavors to preference.
Assembling the Salad
  1. Once the sweet potatoes have cooled for 5 minutes, add them to the salad bowl. Drizzle with dressing and toss gently. Top with toasted nuts and cheese for presentation.

Notes

Prep sweet potatoes up to 4 days ahead and mix dressing ahead for ease. Store components separately to maintain freshness.
