Preparation
- Stack two tortillas and cut them into pumpkin shapes.
- Cut a jack-o-lantern face into one of the pumpkin tortillas; this will be the top.
Cooking
- Heat a skillet over medium heat and add butter or oil.
- Place the bottom pumpkin tortilla down in the skillet.
- Add shredded cheese and any desired fillings on top of the bottom tortilla.
- Carefully place the decorated tortilla (with the face) on top and press gently.
- Cook until the bottom is golden, then carefully flip the quesadilla using a wide spatula.
- Cook until both sides are crispy and the cheese is melted, then let cool slightly before cutting.
Notes
Store leftovers in an airtight container in the fridge for 2-3 days. Reheat in a skillet to maintain crispiness. Can prepare pumpkin shapes earlier and assemble right before serving.
