- Slice the peeled eggs in half lengthwise. Pop the yolks into a bowl and set the whites on a plate.
- Mash the yolks with the avocado until smooth using a fork or a small potato masher.
- Stir in lime juice, salt, pepper, and garlic. Taste and adjust seasoning as needed.
- If desired, add minced red onion, cilantro, or jalapeno for more flavor.
- Spoon or pipe the filling back into the egg whites.
- Top with paprika, chopped cilantro, or jalapeno ring if desired.
- Chill for 20 to 30 minutes before serving for best flavor.
Notes
Don’t skip the lime juice as it keeps the avocado fresh and helps prevent browning. Adjust salt to taste, and remember to store the filling correctly to maintain color and freshness.
