Grilled Peaches with Mascarpone

Ingredients
  

Main Ingredients
  • 4 pieces ripe peaches, halved and pitted Use yellow or white freestone peaches for best results.
  • 1 to 2 tablespoons neutral oil (or melted butter) Brush on peaches to prevent sticking.
  • 1 cup mascarpone Let sit at room temperature for easy spreading if too firm.
  • 2 to 3 tablespoons honey Use more for drizzling before serving.
  • 1 teaspoon vanilla extract Enhances the mascarpone flavor.
  • 1 pinch salt Balances the sweetness.
Optional Toppings
  • cinnamon, lemon zest, chopped nuts, granola, mint Use as desired for added flavor and texture.

Method
 

Preparation
  1. Preheat your grill to medium heat.
  2. Brush the cut side of the peaches lightly with oil and rub some oil on the skin side to prevent sticking.
Grilling
  1. Place the peaches cut side down on the grill. Close the lid and grill for about 3 to 5 minutes until you see grill marks.
  2. Flip and grill the skin side for an additional 1 to 3 minutes to warm through.
Serving
  1. In a bowl, mix together the mascarpone, honey, vanilla, and salt. Adjust sweetness with honey or salt to taste.
  2. Spoon or dollop the honey mascarpone onto each warm peach half. Drizzle with additional honey and add any optional toppings.

Notes

Serve warm or at room temperature. For a special touch, add vanilla ice cream. Grilled peaches can also be made ahead of time; mix the mascarpone a day before and grill just before serving.
