Grilled Peach and Burrata Salad

Ingredients
  

Salad Base
  • 4 cups Mixed greens Arugula adds a peppery bite, but mixed greens or romaine can work as well.
  • 2 ripe Peaches Firm but ripe peaches are ideal for grilling.
Toppings
  • 8 ounces Burrata cheese Can substitute with fresh mozzarella if needed.
  • 1/4 cup Toasted nuts (almonds or pistachios) Provides a crunchy texture.
  • 1 tablespoon Fresh basil or mint For garnish and fresh flavor.
Dressing
  • 2 tablespoons Balsamic glaze or vinaigrette Drizzle over the salad before serving.
  • 1 tablespoon Olive oil For grilling peaches.
  • 1 pinch Salt To sprinkle on peaches before grilling.

Method
 

Grilling Peaches
  1. Slice peaches into wedges, about 6 to 8 slices per peach, and brush the cut sides lightly with olive oil.
  2. Heat the grill pan over medium-high heat until hot, then add a pinch of salt to the peach slices.
  3. Place the peach wedges cut side down on the grill pan and let them grill without touching for about 2 minutes.
  4. Flip the peaches and grill the other side for about 1 minute, just until warm.
Assembling the Salad
  1. In a large bowl, start with the mixed greens as the base.
  2. Add grilled peach wedges on top of the greens.
  3. Tear burrata cheese over the salad.
  4. Top with toasted nuts and chopped basil or mint.
  5. Drizzle with balsamic glaze or vinaigrette and serve immediately.

Notes

This salad is a great dish for summer gatherings. Feel free to adapt toppings and dressing based on personal preference. It works well as a light main course or a refreshing side.
