Grilled Corn on the Cob with Elote Butter

Ingredients
  

For the Elote Butter
  • 1/2 cup softened butter Can be mixed with mayo for creaminess.
  • 1/4 cup mayonnaise Optional; sour cream or Greek yogurt can be used instead.
  • 1 tablespoon lime juice Fresh lime is preferred.
  • 1 teaspoon chili powder Adjust for spice preference.
  • 1 clove garlic, minced Fresh garlic enhances flavor.
  • 1/2 cup cotija cheese, crumbled Feta or Parmesan can be substituted.
  • 2 tablespoons fresh cilantro, chopped Can be substituted with green onions.
For the Corn
  • 4 ears fresh corn on the cob Use fresh corn for best results.

Method
 

Preparation
  1. Prepare the elote butter by mixing softened butter, mayonnaise, lime juice, chili powder, minced garlic, and half of the cotija cheese in a bowl.
  2. Set the elote butter aside at room temperature to allow flavors to meld.
  3. Preheat the grill to medium-high heat.
Grilling
  1. Husk the corn and brush lightly with oil (optional).
  2. Place the corn directly on the grill and cook for about 10-15 minutes, turning occasionally until charred.
  3. Remove the corn from the grill and immediately brush with the elote butter mixture to allow it to melt into the corn.
Serving
  1. Roll or sprinkle the remaining cotija cheese on the corn, then add extra chili powder, and finish with lime juice and chopped cilantro.
  2. Serve immediately and enjoy with napkins for the mess!

Notes

Best served hot. The dish can be messy, but that's part of the fun! Adjust toppings based on personal preferences.
