Ingredients
  

Salad Base
  • 2 lbs boneless skinless chicken breasts or thighs
  • 2 ripe peaches
  • 5 cups arugula or mixed greens
  • 1/2 cup sliced almonds or nuts of choice
  • 1/2 cup feta, goat cheese, or shaved parmesan
  • 1 cup cucumber slices
  • 1/2 cup cherry tomatoes
  • 1/4 cup thinly sliced red onion
  • 1/4 cup dried cranberries optional
Quick Honey Balsamic Dressing
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 1 pinch salt
  • 1 pinch black pepper
  • 1/2 teaspoon Dijon mustard optional

Method
 

Preparation
  1. Season the chicken with salt, pepper, garlic powder, and paprika. Optionally rub with olive oil.
  2. Cut peaches in halves or thick slices, brushing lightly with oil.
Grilling
  1. Grill the chicken until cooked through and browned, then let it rest for a few minutes.
  2. Grill the peaches for 1-2 minutes per side until grill marks appear and they are slightly softened.
Assembly
  1. In a large bowl, start with the greens, then layer sliced chicken, grilled peaches, nuts, and cheese.
Dressing
  1. Drizzle the dressing over the salad right before serving. If packing for lunch, keep the dressing separate.

Notes

For added flavor, toss in fresh basil or modify the dressing with different types of vinegar. Avoid drowning the salad in dressing; start with a small amount.
