Grilled Cheese Burrito

Ingredients
  

Burrito Filling
  • 1 pound Ground beef Can be substituted with shredded chicken, ground turkey, or black beans.
  • 1 packet Taco seasoning Store bought or homemade.
  • 2 cups Cooked rice White rice or Mexican style rice.
  • 1 cup Nacho cheese sauce Jarred or homemade.
  • 2 cups Shredded cheese Mexican blend or cheddar is recommended.
  • 1/2 cup Sour cream or chipotle mayo For added creaminess.
  • 1 cup Crunchy tortilla strips or crushed tortilla chips Optional but recommended for texture.
For Grilling
  • 4 large Flour tortillas Burrito size.
  • 2 tablespoons Butter or oil For the pan.

Method
 

Preparation
  1. Brown the ground beef in a skillet, drain excess grease if needed, then stir in taco seasoning and a splash of water. Let it simmer until it smells like taco night.
  2. Warm tortillas in the microwave for about 15 seconds under a damp paper towel.
  3. Lay out a tortilla and add rice first, then seasoned beef, nacho cheese sauce, shredded cheese, and sour cream or sauce. Add crunchy strips if using.
  4. Fold in the sides of the tortilla and roll tightly from the bottom up.
Cooking
  1. Heat a nonstick pan over medium heat. Sprinkle shredded cheese in a rectangle shape on the pan.
  2. When the cheese starts melting, place the burrito seam side down on top of the cheese. Cook until the cheese is golden and stuck to the tortilla. Flip and repeat if desired.
  3. Let it sit for a minute before slicing, then serve.

Notes

Use medium heat for the cheese crust to avoid burning. Warm tortillas are easier to roll without tearing. This recipe is easily customizable - try scrambled eggs for breakfast or make it a party food with mini burritos.
