Preparation
- Blend the cubed watermelon until smooth. Strain if a smoother texture is desired.
- In a pitcher, muddle mint leaves with sweetener for about 20 seconds.
- Add fresh lemon juice to the mint mixture and stir.
- Pour the watermelon juice into the pitcher and mix well.
- Gradually add cold water or sparkling water, adjusting to taste.
- Add plenty of ice and let sit for 5 minutes to chill before serving.
- Taste and tweak the flavor, adding a pinch of salt if needed or more lemon if too sweet.
Notes
Make ahead by mixing and refrigerating for up to 24 hours, or freeze in cubes for quick serving.
