  • 4 cups Seedless watermelon, cubed Use very ripe watermelon for maximum sweetness.
  • 1/2 cup Fresh lemon juice Fresh lemon juice is essential for the best flavor.
  • 1/4 cup Mint leaves Muddle the mint with sweetener before adding liquids.
  • 3 tablespoons Sweetener (sugar, honey, or agave) Adjust to taste depending on the sweetness of watermelon.
  • 4 cups Cold water or sparkling water Use sparkling water for a fizzy version.
  • Ice Ice Add ice to chill the drink before serving.

Preparation
  1. Blend the cubed watermelon until smooth. Strain if a smoother texture is desired.
  2. In a pitcher, muddle mint leaves with sweetener for about 20 seconds.
  3. Add fresh lemon juice to the mint mixture and stir.
  4. Pour the watermelon juice into the pitcher and mix well.
  5. Gradually add cold water or sparkling water, adjusting to taste.
  6. Add plenty of ice and let sit for 5 minutes to chill before serving.
  7. Taste and tweak the flavor, adding a pinch of salt if needed or more lemon if too sweet.

Notes

Make ahead by mixing and refrigerating for up to 24 hours, or freeze in cubes for quick serving.
