  • 1 cup Milk Whole milk preferred
  • 1/2 cup Broth Chicken or vegetable broth

Preparation
  1. Bring a big pot of salted water to a boil. Toss in the trimmed green beans and cook for about 4 to 5 minutes until bright green and barely tender. Drain and rinse with cold water or dunk in an ice bath to stop cooking.
Making the Sauce
  1. In a large skillet, melt the butter over medium heat. Sauté the chopped onion until soft.
  2. Add the mushrooms and cook until they release their liquid and start to brown. Stir in the garlic and cook for about 30 seconds.
  3. Sprinkle flour over the mixture, stir until it becomes pasty, then slowly pour in milk and broth while stirring. Cook until thickened into a creamy sauce.
  4. Add a splash of soy sauce or Worcestershire, and season with salt and pepper.
Assembling and Baking
  1. Add the green beans into the sauce and stir until coated. If the skillet is oven-safe, bake in it; otherwise, transfer to a greased baking dish.
  2. Bake at 375°F (190°C) until bubbly, about 20 minutes. Remove from the oven, add a generous layer of crispy fried onions, and bake for an additional 5 to 10 minutes until golden.

Notes

Tips include avoiding overcooking the beans, browning the mushrooms for deeper flavor, and seasoning adequately. Assemble ahead of time and cover, refrigerate until ready to bake, but add crispy onions just before the final bake to maintain crunch.
