Ingredients
  

Casserole ingredients
  • 6-8 slices bacon Cooked until crisp and crumbled.
  • 1 tablespoon bacon fat Reserved from cooking bacon.
  • 1 medium onion Chopped (or use onion powder).
  • 1-2 cloves garlic Optional, add for flavor.
  • 1 can cream of mushroom soup Can substitute with homemade sauce.
  • 1/2 cup milk Or a splash of broth to loosen the sauce.
  • to taste black pepper For seasoning.
  • 1/2 cup shredded cheddar Optional addition.
  • to taste crispy topping (fried onions) For the finishing touch.
  • 2 cups green beans Canned, fresh, or frozen. Ensure they are drained and dried.

Method
 

Cooking
  1. Cook the bacon in a skillet until crisp. Move it to a paper towel lined plate and reserve about 1 tablespoon of the bacon fat.
  2. In the same pan, cook chopped onion in the bacon fat and a little butter until soft. Add garlic for about 30 seconds, if using.
  3. Stir in the cream of mushroom soup and a splash of milk to make it creamy and easy to mix. Add black pepper and taste.
  4. Add the green beans and most of the bacon. Stir to coat all the ingredients.
  5. Pour the mixture into a baking dish and bake at 350°F (175°C) until bubbly, usually about 25 minutes.
  6. Add the crispy topping and the remaining bacon, then bake for an additional 5 to 10 minutes until golden and crunchy.

Notes

You can prep the casserole the night before by assembling it without the crispy topping. Store it in the fridge, and add the topping just before baking. Leftovers reheat well, best in the oven.
