  • 2 pounds Fresh green beans, trimmed
  • 4 tablespoons Butter
  • 1 small Onion, finely chopped
  • 12-16 ounces Mushrooms, sliced
  • 2 cloves Garlic, minced
  • 3 tablespoons Flour
  • 1.5 cups Milk (and/or broth, 1/2 cup)
  • Salt and pepper, to taste
  • Soy sauce or Worcestershire (optional) Adds a savory note
  • handful Shredded cheddar or parmesan (optional)
  • Crispy fried onions for topping

Method
 

Preparation
  1. Boil the green beans in salted water for about 4 to 5 minutes, just until they turn bright green. Then drain and rinse with cold water.
  2. In a skillet, melt the butter over medium heat. Cook the chopped onion for 3 to 4 minutes until softened.
  3. Add the sliced mushrooms and a pinch of salt; cook until the mushrooms release their liquid and the pan starts to look dry again.
  4. Add minced garlic and cook for 30 seconds. Sprinkle flour over the mixture and stir for 1 minute.
  5. Slowly pour in the milk and broth while stirring until creamy. Season with pepper and salt, and add a splash of soy sauce or Worcestershire if desired.
  6. Stir in the green beans and cheese if using. Pour the mixture into a greased baking dish.
Baking
  1. Bake at 375°F (190°C) for about 20 minutes.
  2. Add the crispy onions on top and bake for an additional 5 to 10 minutes until golden.

Notes

Taste the sauce before baking; it should be slightly more seasoned than you think. Add crispy onions right before serving for perfect texture. You can prep the casserole ahead of time and refrigerate it until ready to bake.
