Preparation
- Cook the green beans in a pot of boiling salted water for 4 to 5 minutes until bright green. Drain and rinse with cool water.
- In a large skillet, melt the butter and cook the chopped onion for 3 minutes.
- Add the sliced mushrooms and cook until they release their liquid, about 6 to 8 minutes.
- Add minced garlic and cook for an additional 30 seconds.
- Sprinkle flour over the mushroom mixture, stir well, and cook for 1 minute.
- Slowly whisk in milk and a splash of broth. Stir until the mixture thickens, about 3 to 5 minutes. Season with salt and pepper.
Baking
- Preheat oven to 350°F (175°C).
- Mix the cooked green beans with the thickened sauce in a casserole dish.
- Bake for 20 minutes until bubbly.
- Sprinkle crispy fried onions on top and bake for an additional 5 to 10 minutes until golden.
Notes
For prep ahead, store the uncooked casserole (without crispy onions) in the fridge for 1 day. Let it sit at room temperature for 20 to 30 minutes before baking.
