Ingredients

For the Casserole
  • 1 can cream of mushroom soup Use low sodium if required.
  • 1.75 cups milk Half milk and half cream for a richer taste.
  • 1 teaspoon soy sauce Adds a savory flavor.
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 4 cups green beans Fresh, canned, or frozen. If fresh, trim and cut into bite-sized pieces.
Topping
  • 2/3 cup French fried onions Reserve some for the topping.
  • 1 cup French fried onions For the topping.

Method

Preparation
  1. Prep the beans. If using fresh green beans, trim the ends and cut them into bite-sized pieces. Boil in salted water for about 4 to 5 minutes, then drain and rinse with cool water. If using canned, drain well. If using frozen, thaw and pat dry.
  2. In a big bowl, stir together the cream of mushroom soup, milk, soy sauce, black pepper, and garlic powder.
  3. Add the green beans and 2/3 cup of French fried onions to the bowl. Stir until everything is coated.
Baking
  1. Pour the mixture into a greased casserole dish.
  2. Bake at 350°F (175°C) for 25 minutes.
  3. Pull it out of the oven, sprinkle a generous layer of onions over the top, and bake for an additional 5 to 10 minutes until golden.

Notes

You can prepare the casserole a day in advance and bake it just before serving. Just hold off on adding the onion topping until the end. If the sauce is too thick after refrigerating, stir in a splash of milk before baking.
