  • 2 to 3 cups cooked chicken, chopped or shredded Use rotisserie chicken for convenience.
  • 1/2 to 3/4 cup plain Greek yogurt, thick kind Choose a thick Greek yogurt to avoid watery consistency.
  • 1 tablespoon mayo Optional, but adds richness.
  • 1 to 2 teaspoons Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 cup chopped celery
  • 2 to 3 tablespoons chopped red onion or green onion
  • to taste Salt and pepper Adjust according to preference.
Optional Add-ins
  • Fresh herbs (dill, parsley) For added freshness.
  • Chopped almonds or walnuts For crunch.
  • Grapes For sweetness.
  • Paprika or cayenne For a bit of heat.

Method
 

Mixing Ingredients
  1. In a large bowl, combine Greek yogurt, Dijon mustard, lemon juice, salt, pepper, and optional mayo.
  2. Stir until well mixed.
  3. Fold in the chopped or shredded chicken, celery, and onion gently until completely coated.
Chill and Serve
  1. Let the salad sit in the fridge for 15 to 30 minutes for the flavors to meld.
