  • 1 cup Plain Greek yogurt Can use regular plain yogurt or dairy-free yogurt if needed.
  • 2 tablespoons Lemon juice Lime juice can be used as a substitute.
  • 2 tablespoons Olive oil Just enough for flavor and browning.
  • 4 cloves Minced garlic Fresh is best but garlic powder can be used in a pinch.
  • 2 teaspoons Dried oregano Can substitute with thyme or dill.
  • 1 teaspoon Salt Adjust according to taste.
  • 1/2 teaspoon Pepper
  • 1/4 teaspoon Paprika Optional for added flavor.

Method
 

Preparation
  1. In a bowl, combine Greek yogurt, lemon juice, olive oil, minced garlic, oregano, salt, pepper, and paprika.
  2. Stir well to combine the marinade.
  3. Coat the chicken with the marinade and let it rest.
  4. Marinate the chicken for at least 30 minutes, ideally 2 to 8 hours.
Cooking
  1. Grill or bake the marinated chicken until fully cooked.
  2. If grilling, preheat the grill on medium heat and ensure the grates are oiled.
  3. Check for doneness and let the chicken rest for a few minutes before serving.

Notes

This marinade works well with chicken breasts, thighs, or tenders. Do not overcook to prevent drying out. Great for meal prep and can be used to make sandwiches or salads with leftovers.
