Ingredients
  

For the Marinade
  • 3 tablespoons olive oil
  • 1 large lemon juice plus extra wedges for serving
  • 3-4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt plus more to taste
  • black pepper to taste
  • optional: a pinch of smoked paprika and a splash of red wine vinegar
For the Skewers
  • 1.5-2 pounds chicken thighs or chicken breast, cut into bite-sized chunks
  • 20-30 minutes soak wooden skewers if using wooden skewers

Method
 

Preparation
  1. Mix the marinade ingredients in a bowl, then toss in the chicken until it is well coated.
  2. Cover and marinate for at least 30 minutes, but 2 to 6 hours is recommended.
  3. Soak wooden skewers in water for 20 to 30 minutes if using.
  4. Thread the marinated chicken pieces onto skewers, leaving some space between pieces.
Cooking
  1. Cook the skewers on a hot grill or grill pan, turning every couple of minutes, until nicely browned and cooked through.
  2. Rest the skewers for a couple of minutes before serving.

Notes

Serve with pita, tomato cucumber salad, rice or orzo, and a yogurt sauce. For a variation, consider adding vegetables to the skewers or using pork instead of chicken.
