Ingredients
  

For the Chicken Marinade
  • 4 pieces chicken thighs or breasts Thighs are juicier, but breasts work well too.
  • 2 tablespoons olive oil Used for marinating and cooking the chicken.
  • 2 tablespoons lemon juice Fresh lemon for brightness.
  • 2 cloves minced garlic Add less if sensitive to garlic.
  • 1 teaspoon dried oregano For flavoring the chicken.
  • to taste salt and pepper For seasoning.
For the Bowl Base
  • 2 cups cooked rice or quinoa Use whatever you have; leftover rice is great.
For the Toppings
  • 1 cup chopped cucumber Fresh and crunchy.
  • 1 cup chopped tomato Super refreshing.
  • 1/2 cup red onion Soak in cold water to mellow if too sharp.
  • 1 cup chopped lettuce Use romaine or any preferred lettuce.
  • 1/2 cup feta cheese Salty and creamy.
For the Tzatziki Sauce
  • 1 cup Greek yogurt Full fat tastes best.
  • 1/2 cup grated cucumber Squeeze out excess water.
  • 2 tablespoons lemon juice For flavor.
  • 1 clove minced garlic Adjust to taste.
  • to taste salt Season to your liking.
  • 1 teaspoon dill Optional, for extra flavor.

Method
 

Preparation
  1. In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken and marinate for 20 to 30 minutes, or up to an hour for best flavor.
  2. Cook the chicken in a pan over medium heat with a little oil until browned and cooked through, about 5-7 minutes per side. Let it rest for a few minutes before slicing.
Assembly
  1. Prepare the base with cooked rice or quinoa.
  2. Top with chopped cucumber, tomato, red onion, lettuce, and feta.
  3. Mix together the tzatziki ingredients and drizzle over the bowl.

Notes

These bowls are great for meal prep and hold up well in the fridge for 3-4 days. Reheat chicken and rice, then add cold toppings and sauce for the best flavor.
