Ingredients
  

For the Cupcakes
  • 1 cup All purpose flour
  • 1 cup Sugar
  • 2 tsp Baking powder
  • 1 pinch Salt
  • 2 large Eggs
  • 1/3 cup Neutral oil or melted butter
  • 1 cup Grape soda
  • 1 tsp Vanilla extract
  • optional Purple food coloring
  • optional Grape extract
For the Frosting
  • 1/2 cup Butter, softened
  • 3-4 cups Powdered sugar
  • 1-2 tbsp Grape soda
  • 1 pinch Salt
  • optional Purple food coloring

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and line a standard muffin pan with paper liners.
  2. In a mixing bowl, whisk together dry ingredients: flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together eggs, oil (or melted butter), vanilla extract, and grape soda.
  4. Pour the wet ingredients into the dry ingredients and mix just until combined.
  5. Fill the cupcake liners about two-thirds full.
Baking
  1. Bake in the preheated oven for 16 to 20 minutes or until a toothpick inserted comes out clean.
  2. Allow the cupcakes to cool fully before frosting.
Frosting
  1. In a bowl, beat softened butter until creamy.
  2. Gradually add powdered sugar and mix until smooth.
  3. Add a splash of grape soda and a pinch of salt, mixing until the desired texture is reached. Optionally, add purple food coloring for a bold look.

Notes

Let the soda sit open for about 5 minutes before using if it is super fizzy. This makes measuring easier and helps the batter to foam less.
