  • 1 can (14.5 or 15 ounce) whole peeled tomatoes, diced, or crushed Choose based on desired texture.
  • 1-2 teaspoons olive oil For seasoning the tomatoes.
  • 1 small clove garlic, grated For added flavor.
  • 1 pinch sugar Optional, to balance acidity.
  • 1 teaspoon dried oregano or thyme For seasoning.
  • 1 small butter, cut into tiny pieces For richness.
  • 1/4 cup plain or seasoned breadcrumbs For topping.
  • 1/4 cup grated Parmesan or Pecorino cheese Optional, for cheesy edges.
  • 1 to taste salt and pepper For seasoning.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Lightly butter or oil a small baking dish.
  3. Drain a splash of liquid from your can if it's very watery.
  4. Pour the tomatoes into a bowl, breaking up whole peeled tomatoes gently.
  5. Season the tomatoes with salt, pepper, olive oil, grated garlic, sugar, and dried herbs.
  6. Pour the seasoned tomatoes into the baking dish, dot the top with butter, and sprinkle breadcrumbs and cheese on top.
Baking
  1. Bake in the preheated oven for about 25 to 35 minutes until edges are bubbling and top is golden.
  2. If the top browns too quickly, tent with foil for a few minutes.
  3. For extra texture, don’t stir and let the tomatoes caramelize on the edges.

Notes

Serve alongside warm tortillas or as a topping for grilled chicken. Leftovers can be stirred into pasta or used as a dip. This dish can be stored in the fridge for up to 4 days and reheated.
