  • 1 teaspoon vanilla extract Essential for cookie flavor.
  • 2 cups gluten free flour blend Use a 1 to 1 baking blend with xanthan gum.
  • 1 teaspoon baking soda For leavening.
  • 1 teaspoon baking powder For rise and spread.
  • 1/2 teaspoon salt To balance the sweetness.
  • 1 cup semi-sweet chocolate chips Feel free to add extra for joy.
Optional extras
  • 1/4 cup chopped nuts For additional texture.
  • a dash flaky salt To sprinkle on top after baking.

Method
 

Preparation
  1. Cream the butter and sugars until fluffy and lighter in color.
  2. Add the egg and vanilla extract, then mix again.
  3. Sprinkle in the gluten free flour blend, baking soda, baking powder, and salt. Mix until a dough forms.
  4. Fold in the chocolate chips.
  5. Rest the dough for 20 to 30 minutes.
Baking
  1. Preheat the oven to 350°F (175°C).
  2. Scoop the dough onto a baking tray.
  3. Bake for about 9 to 11 minutes, until the edges are set and the centers look slightly underdone.
  4. Cool on the tray for a few minutes before transferring to a wire rack.

Notes

For best results, do not skip the dough resting step and do not overbake the cookies.
