Wet Ingredients
  • 3/4 cup unsalted butter Provides richness.
  • 1 cup brown sugar Keeps cookies soft.
  • 1 large egg Binds ingredients.
  • 1/2 cup molasses Essential flavor.
  • 1 tsp vanilla extract Enhances aroma.

Method
 

Preparation
  1. In a bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and salt. Set aside.
  2. In a larger bowl, beat the butter and brown sugar until creamy and fluffy.
  3. Mix in the egg, molasses, and vanilla until smooth.
  4. Add the dry ingredients to the wet ingredients and mix until a soft dough forms.
  5. Divide dough into two flat discs, wrap, and chill for at least 2 hours.
Baking
  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment.
  2. Roll dough on a lightly floured surface to about 1/4 inch thick.
  3. Cut shapes, place on the sheet, and chill the cutouts for 10 minutes if the kitchen is warm.
  4. Bake for 8-10 minutes or until edges are set but not dark.
  5. Cool on the pan for 5 minutes, then transfer to a rack to cool completely.

Notes

Avoid overbaking for soft cookies. Chill the dough for better rolling and to maintain shape. Can freeze dough for up to 2 months.
