Preparation
- In a bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and salt. Set aside.
- In a larger bowl, beat the butter and brown sugar until creamy and fluffy.
- Mix in the egg, molasses, and vanilla until smooth.
- Add the dry ingredients to the wet ingredients and mix until a soft dough forms.
- Divide dough into two flat discs, wrap, and chill for at least 2 hours.
Baking
- Preheat oven to 350°F (175°C) and line baking sheets with parchment.
- Roll dough on a lightly floured surface to about 1/4 inch thick.
- Cut shapes, place on the sheet, and chill the cutouts for 10 minutes if the kitchen is warm.
- Bake for 8-10 minutes or until edges are set but not dark.
- Cool on the pan for 5 minutes, then transfer to a rack to cool completely.
Notes
Avoid overbaking for soft cookies. Chill the dough for better rolling and to maintain shape. Can freeze dough for up to 2 months.
