Ingredients
  

For the Ribs
  • 2 to 3 pounds St. Louis style ribs Trimmed into a neat rectangle for even cooking.
  • 1 to 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 6 tablespoons butter For the garlic parmesan butter.
  • 5 to 6 cloves fresh garlic, minced
  • 1 cup grated parmesan Plus extra for serving.
  • 1 tablespoon chopped parsley Optional, for garnish.

Method
 

Preparation
  1. Heat your oven to 300 F. Line a baking sheet with foil for easy cleanup.
  2. Remove the membrane from the ribs if it is still attached.
  3. Mix salt, pepper, paprika, and garlic powder together, and rub it all over the ribs.
  4. Place the ribs on the sheet, cover tightly with foil, and bake for about 2.5 hours.
  5. While the ribs are baking, melt butter in a small pan, add minced garlic for about 30 to 60 seconds, then turn off the heat and stir in parmesan.
Cooking
  1. Uncover the ribs, brush with garlic parmesan butter mixture, turn the oven up to 425 F, and bake uncovered for an additional 10 to 15 minutes, until the top is golden.
  2. Let the ribs rest for 10 minutes before slicing.

Notes

Resting the ribs for 10 minutes makes them juicier and easier to slice. Adjust garlic and parmesan levels to taste.
