Ingredients
  

Vegetables
  • 2 cups Potatoes, chopped into bite-sized pieces Use baby potatoes for less chopping
  • 2 cups Carrots, chopped into bite-sized pieces
  • 2 cups Green beans, trimmed Toss in halfway if thinner
Seasoning
  • 3 tablespoons Olive oil Just enough to glisten
  • 3 cloves Garlic, minced Fresh garlic preferred
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper, to taste
  • 1 teaspoon Fresh herbs (parsley, thyme, etc.) Feel free to mix and match

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Chop potatoes and carrots into bite-sized pieces, and trim the ends of the green beans.
  3. In a large bowl, toss together the chopped vegetables with olive oil, minced garlic, salt, pepper, and herbs.
Cooking
  1. Spread the vegetable mixture on a parchment-lined baking tray, making sure not to crowd them.
  2. Roast in the oven for about 25-30 minutes, flipping halfway through if desired.
  3. Remove from oven and enjoy immediately.

Notes

Using parchment paper helps prevent sticking and makes cleanup easier. For extra flavor, consider adding lemon juice or parmesan cheese before serving.
