Garlic Chicken Lo Mein

Ingredients
  

Noodles
  • 8 oz lo mein noodles Spaghetti or linguine can be used as alternatives.
Chicken
  • 1 lb boneless skinless chicken breasts or thighs Thinly sliced.
Vegetables
  • 1 cup shredded carrots
  • 1 cup sliced bell pepper
  • 1 cup snap peas
  • 1 cup mushrooms
  • 1 cup cabbage Or any other quick-cooking veggies on hand.
Garnish
  • 2 tablespoons sliced green onions For fresh flavor at the end.
Oil and Sauce Ingredients
  • 2 tablespoons neutral oil (like avocado or canola) For cooking.
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional) Adds extra flavor.
  • 1 tablespoon brown sugar or honey
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • 1 teaspoon cornstarch For velveting chicken.
  • 1 teaspoon red pepper flakes or sriracha (optional) For added heat.

Method
 

Preparation
  1. Cook the lo mein noodles according to the package instructions, then drain and set aside.
  2. In a small bowl, mix together the soy sauce, oyster sauce, brown sugar, sesame oil, water, and rice vinegar to create the sauce.
  3. Thinly slice the chicken and toss with cornstarch, soy sauce, and neutral oil. Let it sit for 10 minutes. Chop the vegetables and mince the garlic.
Cooking
  1. Heat a large pan over high heat, add a little oil, and then add the chicken. Cook until just done, then scoot it to the side or remove it to a plate.
  2. Add the vegetables to the pan and stir fry for a few minutes until they soften but still have some crunch.
  3. Add the minced garlic to the pan and stir for about 30 seconds.
  4. Add the cooked noodles and mixed sauce to the pan. Toss everything together, adding a splash of water if it looks dry.
  5. Finish by adding green onions, tasting, and adjusting with more soy sauce, vinegar, or sugar as desired.

Notes

For best results, prepare all ingredients before cooking. Velveting the chicken helps keep it tender. Store leftovers in the fridge for up to 3 days.
