  • 1.25 to 1.5 pounds steak, cut into bite-size pieces Choose tender cuts like top sirloin or flat iron for best results.
  • 2 tablespoons neutral oil for searing
  • 3 tablespoons unsalted butter Adds richness and flavor.
  • 4 cloves garlic, minced
  • pinch crushed red pepper, optional For a bit of heat.
Rigatoni Ingredients
  • 12 ounces rigatoni pasta Cook until al dente.
  • 1 cup heavy cream or half-and-half For a creamy sauce.
  • 1.5 cups shredded cheese blend (mozzarella and Parmesan) For a melty, cheesy texture.
  • Salt and black pepper To taste.
  • Fresh parsley or chives for garnish Enhances presentation.

Method
 

Preparation
  1. Get a large pot of salted water boiling and drop in the rigatoni. Cook until al dente.
  2. Pat the steak pieces dry with paper towels and season with salt and pepper.
Cooking
  1. Heat a heavy skillet until very hot, add oil, and sear the steak tips for about 1 to 2 minutes per side.
  2. Lower the heat, add butter, garlic, and crushed red pepper. Stir until fragrant, then toss the steak back in to coat.
  3. Drain the pasta and return it to the pot. Stir in cream and the shredded cheese over low heat until melted and glossy.
  4. Serve the cheesy rigatoni in bowls topped with the garlic butter steak tips and garnish with fresh herbs.

Notes

For a special touch, serve with warm bread and cinnamon honey butter on the side. Leftover steak can be reheated gently to maintain tenderness.
