Ingredients
  

For the steak bites
  • 1 pound sirloin steak, cut into bite-size pieces Ribeye or strip steak can also be used.
  • 1 teaspoon salt Season before cooking.
  • 1/2 teaspoon black pepper To taste.
  • 1 teaspoon paprika Optional for warmth.
  • 1 tablespoon oil For coating the skillet.
  • 3 tablespoons butter Use real butter for best flavor.
  • 3 cloves garlic, minced Fresh garlic gives the best flavor.
  • 1/4 cup fresh parsley, chopped For garnish.
For the loaded mashed potatoes
  • 2 pounds Yukon Gold or Russet potatoes, peeled and chopped Yukon Gold for creaminess, Russets for fluffiness.
  • 1/2 cup milk or cream Warm before adding to potatoes.
  • 1/2 cup sour cream For tanginess.
  • 1 cup cheddar cheese, shredded For a melty, salty bite.
  • 4 slices crispy bacon, crumbled Optional for crunch.
  • 2 tablespoons chives or green onions, chopped For freshness.
  • 1 teaspoon salt To taste.

Method
 

Preparation
  1. Cut the steak into bite-size pieces, aiming for about 1 inch chunks.
  2. Season with salt, pepper, and paprika.
  3. Peel and chop the potatoes and prepare to boil them.
Cooking Steak Bites
  1. Heat a skillet over medium-high heat and add oil to coat the bottom.
  2. Add the steak bites in a single layer and let them sit for a minute before stirring.
  3. Cook for about 2 to 4 minutes total depending on your preferred steak doneness.
  4. Lower the heat to medium, add butter and minced garlic, stirring until fragrant but not burned.
  5. Toss the cooked steak bites in the garlic butter and finish with chopped parsley.
Cooking Mashed Potatoes
  1. Boil potatoes in salted water until tender, then drain.
  2. Add warmed milk, sour cream, cheese, salt, and any additional loaded ingredients to the potatoes.
  3. Mash until creamy and well combined.
Serving
  1. Pile the loaded mashed potatoes on a plate, top with steak bites, and drizzle with extra garlic butter.
  2. Serve with additional toppings in small bowls for guests to customize.

Notes

Let steak sit at room temperature for 15-20 minutes before cooking for even cooking. Always use a clean cutting board and knife.
