  • 1 cup reserved pasta water Save before draining the pasta.
For the Sauce
  • 2 tbsp butter Salted butter is recommended.
  • 1 tbsp olive oil Helps prevent the butter from burning.
  • 8 oz sliced mushrooms Cremini or white mushrooms work best.
  • 3 cloves minced garlic Fresh garlic is essential for flavor.
  • 4 oz goat cheese Soft goat cheese that melts well.
  • to taste salt Adjust according to preference.
  • to taste black pepper Freshly ground is recommended.
  • optional chili flakes For a bit of heat.

  • handful baby spinach For added greens.
  • 1 tbsp lemon zest For brightness.
  • 1 tbsp fresh parsley or thyme For garnish and flavor.

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil and cook the pasta until just tender. Reserve 1 cup of pasta water before draining.
Preparing the Sauce
  1. In a large skillet, heat butter and olive oil over medium-high heat.
  2. Add the sliced mushrooms in an even layer and let them brown for a few minutes, then stir. Season with salt and pepper.
  3. Stir in minced garlic and cook for about 30 seconds, ensuring it does not burn.
  4. Add a bit of the reserved pasta water to deglaze the pan, scraping up any browned bits.
  5. Turn the heat to low and add goat cheese in chunks, stirring until melted and combined into a creamy sauce. Add more pasta water as needed to reach desired consistency.
Final Assembly
  1. Add the drained pasta to the sauce and toss until the pasta is well coated.
  2. Taste and adjust seasoning with salt, pepper, or chili flakes if desired. Serve with herbs or additional toppings if using.

Notes

This pasta dish is forgiving and can be adjusted based on available ingredients and dietary preferences. Serve fresh for best texture but can be reheated with a splash of water or milk to maintain creaminess.
