Preparation
  1. In a bowl, stir the Greek yogurt, peanut butter, honey, vanilla extract, and salt until smooth and evenly blended.
  2. Line a mini muffin tin with liners, or lay parchment on a baking sheet.
  3. Spoon the mixture into small mounds (around 1 tablespoon each) for bite-sized pieces.
  4. If using toppings, drizzle melted chocolate or sprinkle chips/nuts on top immediately.
  5. Freeze for at least 2 hours, or until firm.
  6. Once frozen, pop them out and store in a sealed freezer bag or container.

Notes

Let the bites sit for 2-3 minutes before eating for a softer texture. Store them tightly sealed in the freezer to avoid freezer smells. Variations include almond butter, adding protein powder, or making a chocolate shell.
