Frito Corn Salad

A fun, crunchy, and creamy side dish that's perfect for potlucks, making use of pantry staples to create a refreshing salad with a satisfying crunch.

Ingredients
  

Main Ingredients
  • 2 cans sweet corn, drained or about 3 cups cooked corn; can also use frozen corn, thawed and drained.
  • 1.5 cups Mexican blend cheese, shredded cheddar works too.
  • 0.5 cups mayonnaise
  • 0.5 cups sour cream
  • 3-4 pieces green onions, sliced
  • 1 small can green chiles, drained optional for additional flavor.
  • 0.5 teaspoons chili powder
  • to taste salt and pepper
  • to taste lime juice if available.
  • 3-4 cups Fritos, lightly crushed Chili cheese Fritos recommended but regular works.

Method
 

Preparation
  1. Drain the corn very well to avoid a watery salad.
  2. In a large bowl, mix the mayonnaise and sour cream until smooth. Add chili powder, salt, pepper, and lime juice if desired.
  3. Stir in corn, shredded cheese, green onions, and green chiles.
  4. Cover and chill for at least 30 minutes to enhance flavor.
  5. Before serving, fold in the Fritos. Alternatively, serve Fritos on the side to maintain their crunch.

Notes

Best served the same day for maximum crunch. Store the creamy mixture (without Fritos) in an airtight container for up to 3 days. Keep Fritos separate until serving for optimal texture.
