Main ingredients
  • 3 medium potatoes Chopped into thin coins or cubes
  • 1 large onion Diced
  • 14 ounces smoked Polish sausage Sliced into bite-sized rounds
  • 2 tablespoons oil For frying
  • to taste salt For seasoning
  • to taste pepper For seasoning
  • optional paprika For added flavor

Method
 

Preparation
  1. Grab a big frying pan or cast iron skillet and warm up a splash of oil on medium-high heat.
  2. Chop the potatoes into thin coins or cubes, and dice the onion, while slicing the smoked Polish sausage into bite-sized rounds.
Cooking
  1. Toss the potatoes into the pan first and let them cook for about 7 minutes without stirring.
  2. After the potatoes have started to brown, scoot them to the side and add the onions and sausage.
  3. Continue to flip everything occasionally for about 12-15 minutes until everything is cooked through and has toasty brown edges.
  4. Season with salt, pepper, and optionally paprika, according to your preference.
  5. If you like a little char, leave the ingredients alone for another minute before scooping them out.

Notes

Can be made ahead of time and stored in the refrigerator. Reheat in a skillet with a splash of oil for extra crispiness. Serve with crusty bread, a fried egg, shredded cheese, sour cream, or spicy mustard.
