Ingredients
  

Main Ingredients
  • 1 cup Long grain white rice, uncooked Can use Jasmine or Basmati rice.
  • 1 large Onion, thinly sliced Or about 2 cups sliced.
  • 2 tablespoons Butter Plus a splash of olive oil if desired.
  • 2 cloves Garlic, minced Optional but recommended.
  • 2 cups Beef broth Can use a mix of broth and water or mushroom broth for a lighter option.
  • 1 packet French onion soup mix Or 2 to 3 tablespoons of a homemade seasoning blend.
  • Salt and pepper to taste
  • Optional: Shredded Gruyere or Swiss cheese To top the rice.

Cooking
  1. In a medium pot, melt butter over medium heat. Add the sliced onions with a pinch of salt. Stir often for about 10 to 15 minutes until soft and golden. If they start sticking, add a tiny splash of water and scrape the bottom.
  2. Add garlic (if using) and stir for 30 seconds.
  3. Pour in the uncooked rice and stir for about 1 minute.
  4. Add broth and the soup mix. Stir well, bring it to a gentle boil, then turn heat to low. Cover and cook about 15 to 18 minutes, or until the rice is tender.
  5. Turn off the heat and let it sit covered for 5 minutes. Fluff with a fork and top with cheese, covering for another minute to melt.

Notes

Make ahead by cooling and storing in the fridge up to 4 days. Reheat with a splash of broth or water. Perfect as a side dish with chicken or pork, also goes well with salads and roasted vegetables.
