French Onion Pork Chops

Ingredients
  

For the Pork Chops
  • 4 pieces Pork chops, about 1 inch thick Bone in or boneless
  • 2-3 large Onions, thinly sliced Essence of the dish
  • 2 tablespoons Butter For cooking the onions
  • 1-2 tablespoons Oil To prevent burning the butter
  • 2 cloves Garlic Optional but recommended
  • 1 cup Beef broth Chicken broth can be used as alternative
  • 1 tablespoon Worcestershire sauce A splash for flavor
  • to taste Salt and pepper For seasoning
  • 1 teaspoon Dried thyme For added flavor
  • 1-2 tablespoons Flour or cornstarch slurry To thicken the gravy
  • 1 cup Swiss or Gruyere cheese For melting on top

Method
 

Preparation
  1. Pat the pork chops dry and season them well with salt and pepper.
  2. Heat the butter and oil in a hot pan, then sear the pork chops until they are golden brown.
  3. Remove the pork chops from the pan and set aside.
  4. In the same pan, cook the sliced onions on medium-low heat until they are soft and golden brown, about 20 to 30 minutes.
  5. Once the onions are caramelized, add the beef broth and scrape up any browned bits from the pan.
  6. Return the pork chops to the pan, gently simmer them in the onion gravy to finish cooking.
  7. At the end, top the pork chops with cheese and cover the pan until melted.

Notes

Using the right thickness of pork chops and searing them properly makes a big difference in flavor and tenderness. For storage, keep in an airtight container for up to 3 days. Reheat gently to avoid drying out the pork.
