  • 2 large yellow onions, thinly sliced or 3 medium onions
  • 2 tablespoons butter
  • 1 teaspoon salt start with this amount and adjust later
  • a few grinds black pepper
  • 1 cup sour cream
  • 0.5 cup Greek yogurt or mayo optional but recommended for body
  • 1 small clove garlic, finely grated optional
  • a tiny splash Worcestershire sauce optional for savory kick
  • to taste Chives or parsley for topping optional

Method
 

Caramelizing the Onions
  1. Melt the butter in a large skillet over medium heat. Add the sliced onions and salt. Stir, then let them sit for a few minutes before stirring again.
  2. After about 10 minutes, turn the heat to medium low. Stir every few minutes, scraping any brown bits. If the onions start sticking too much, add a tablespoon of water and keep going. Cook until deep golden brown and fragrant, about 30 to 45 minutes.
Preparing the Dip
  1. Let the caramelized onions cool on a plate for 10 to 15 minutes.
  2. In a bowl, stir together sour cream and Greek yogurt (or mayo). Add pepper, optional garlic, and a tiny splash of Worcestershire sauce if using.
  3. Fold in the cooled onions. Taste and adjust salt and pepper. Cover and chill for at least 1 hour.

Notes

Best if made a day in advance. Store covered in the fridge for 3 to 4 days. Stir before serving as dip may loosen slightly.
